Siciliana Risotto with Spanish sausages and sundried tomato

Sicilian RisottoWe love Unearthed’s Hot and Spicy Spanish Cooking Chorizo Sausages available from Waitrose. Cook one pack of the sausages according to their instructions before starting your risotto. You’ll also need half a regular jar of good quality sundried tomatoes in oil which you’ll need to drain before using. Chop them up if they’re any bigger than cherry-tomato size. Cook the Siciliana risotto according to the instructions on the pack and when it’s ready serve up with some chopped sausages and sundried tomatoes for every helping. Serves two/three.



Spanish Garden Paella with chorizo

Spanish Garden PaellaWe recommend using cooking chorizo here. Buy it ready-cubed if you can or if not chop into small cubes. When the Spanish Garden Paella is ready quickly heat up a small frying pan without any oil or fat in it till really hot then add the chorizo cubes and keep stirring all the time until they start to go deep brown. This shouldn’t take more than 90 seconds. Quickly mix the browned chorizo cubes into the hot paella and serve. This is also good with cubes of pancetta instead of chorizo. Brown the pancetta cubes as you would the chorizo. Serves two/three



Chilli & Garlic Couscous with barrel-age feta and olives

Chilli & Garlic CouscousFor a fantastic Summer salad to go with a barbecue we recommend making up a pack of Gustosecco Chilli & Garlic Couscous and adding cubes of Unearthed Barrel Aged Feta and chopped pitted green olives. Goes brilliantly with barbecued spicy chicken. Serves four.



Lavender Rice Pudding with strawberries and vanilla icecream

Lavender Rice PuddingCold rice pudding? Oh yes! Our kids love it as a dessert with icecream and we think our Lavender Rice Pudding is fantastic with vanilla icecream and strawberries as a special treat. For extra-juicy strawberries hull and chop the fruits about an hour in advance of serving, put them in a bowl, dust with icing sugar and mix all together. Put in the fridge for an hour and the sugar will bring out the strawberry juices. We use Vanilla Dusting Sugar from Waitrose instead of ordinary icing sugar for an extra touch of luxury.

I purchased your chocolate rice pudding at the weekend and made it yesterday evening for tea. Just to say it was very lovely served with Cornish clotted cream. My two children asked for seconds and sadly it had all been eaten up by my hubby !! We’ll will be definitely buying it again.
